It took us a while to get the tomatoes just right, we combine bits of ginger, aged balsamic, red wine vinegar, bit of herbs and some brown sugar in just the right quantities to make the tomatoes fantastically tart and sweet to go along with the mozzarella cheese. Hope you enjoy.
